If you read our last post, you may be deciding which diet to try – Gazpacho or Viva Mayr.  If you like the simplicity of the Gazpacho Diet, we’re offering our favourite gazpacho recipe in this post. It’s easy to prepare and delicious! From Martha Rose Shulman’s Mediterranean Light cookbook (1989 edition), we hope you enjoy:

Blender Gazpacho

  • 1 1/2 pounds (6 or 7 ripe) ripe tomatoes, peeled (we use canned plum tomatoes in winter)
  • 1 or 2 cloves of garlic (more if desired)
  • 1/2 onion
  • 1 carrot, coarsely chopped
  • 1 small cucumber, peeled and coarsely chopped (we actually leave the skin on for extra nutrition)
  • 1 green pepper, seeded and coarsely chopped
  • 2 parsley sprigs
  • 3-4 T. chopped fresh basil (to taste) or use 1 1/2 T. dried basil
  • juice of 1-2 lemons (to taste)
  • salt and freshly ground pepper
  • 3-4 cups V-8 juice or tomato juice (we prefer V-8)

Blend together all the ingredients in a blender until smooth.  Chill several hours. Adjust seasonings.  The soup will keep in the refrigerator for a several days.  We serve with a swirl of low fat yogurt and a garnish of finely diced cucumber or chopped chives, green onions or parsley
